Citrus & Herb Roasted Turkey

Temper Turkey at room temperature for 1.5 hrs. Place turkeys in oven 2 hrs., basting every half hour with pan juices. Remove from oven and tent the breast with aluminum foil.
Return to oven and continue to cook at 375 F for an additional 1.5 hrs. Poke a small hole between the thigh and the lower breast.
If the juices run clear, the turkeys are done, and internal temperature reaches 165 degrees. Let rest 30 minutes before serving.
